La Patisserie Numerique / Digital Patisserie has deployed several printers in French bakeries and restaurants. what do they daily print, and how is the reuse of coproducts changing their business!?

Marine Coré Baillais is the founder of La Patisserie Numerique / Digital Patisserie. As former Deputy CEO of Sculpteo, a well-known online 3D printing service, I came to Food printing with convictions and some bias. I’ll try to modestly explain how my background and my experience as a pastry chef has lead me to create the Digital Patisserie.

As she is really focusing on food system evolution, she states that she has a narrow scope when talking which emerging technologies or trends have the greatest potential in the short term / the long term.

She thinks these are precision fermentation and AI.
